Winners of the 2012 Roussillon Dessert Trophy announced ? Blog

The final of the 2012 Roussillon Dessert Trophy, held on Monday 10th October at L?Atelier des Chefs, saw four renowned restaurants battle it out to win the prestigious accolade. This year?s competition challenged the finalists to incorporate a theme of honey and dried fruits into the creation of the ultimate dessert and Roussillon Vin Doux Natural (dessert wine) pairing.

The talented judging panel, who offered different areas of expertise across food and drink, included Benoit Blin, the chef p?tissier at Le Manoir aux Quat? Saisons; Sara Jayne Stanes OBE, the chief executive of the Academy of Culinary Arts; Sarah Jane Evans MW,?writer, broadcaster and founding member of the Academy of Chocolate; Jennifer Docherty,?buyer at Liberty Wines; and Anne Coquelin, p?tissi?re at Le Manoir aux Quat? Saisons. The judges were on-hand to adjudicate all stages of the ?cook-off? final ? observing the preparation process and questioning the teams as they perfected their desserts ? which certainly added to the competitive atmosphere in the kitchen.

Each sommelier and chef team presented a unique interpretation of the brief, with surprising ingredients and clever flavour combinations from all pairings. However, despite the diversity of the desserts presented, the judges noted the standard was consistent across all competitors, even more so than in previous years. Such a close-run challenge between the quality of all teams? dishes inevitably led to fierce debate between the judges, who struggled to decide between the winner and runner up.

After much deliberation, it was agreed that pastry chef Sarah Frankland and sommelier Robert Giorgione of William Curley deserved the number one spot with their pairing of Apricot, Pistachio and Chocolate Pav? with 1999 Rivesaltes Ambre, VSN Domaine Fontanel.

The judges were particularly impressed with the excellent teamwork displayed by Sarah and Robert, who both spoke eloquently and passionately about the harmony between their dessert and wine. Anne Coquelin, p?tissi?re at Le Manoir aux Quat? Saisons and past winner of the competition, commented, ?Working seamlessly together is utterly vital for a winning team and, as we know from experience, an indispensable quality for success in the forthcoming European final.?

Benoit Blin announced the winners and presented them with their award at the drinks reception held immediately after the competition.
